Edna Lewis was born in 1916 in Freetown, Virginia, a small town that her grandfather helped establish in the late 1800s with other freed slaves. She grew up cooking on a wood-fired stove. As an adult, she ran a restaurant in New York City for years and then taught cooking classes and wrote cookbooks that preserved and carried on traditional recipes and culture of Southern American cooking. This recipe is from Edna’s cookbook, The Taste of Country Cooking (Knopf ISBN 978-0394732152). Edna died in 2006.
